The Microbiology and Immunology Research Group of the University of Jaén and linked to the Campus of International Agri-Food Excellence (ceiA3) studies the protective effects against virgin olive oil fats compared to other types of fats. The goal is to investigate how these components affect the activity of neutrophils, which are cells of the immune system involved in defending the body against infectious diseases.
